The UK locked in certainty early and other deals got done after. You want to be first or you want to wait around hoping for better? First mover advantage is a real thing, even if the BBC editorial line treats it like a scandal.
The same outlets cheering every EU tariff hike on American goods are now sad that America cut deals with other countries too. Pick a lane. Either free trade is good or it isn't.
